Alaska Seafood and Alaskan Brewing Company's Amber Beer were in the spotlight at the Second Annual World of Flavors International Conference & Festival held at the prestigious Culinary Institute of America (CIA) at Greystone in Napa Valley this November. More than 400 high-profile chefs, restaurateurs, food and beverage directors, journalists and hospitality industry professionals were drawn to the event, which focused on the regional flavors of Mexico.

As a major sponsor, Alaska Seafood Marketing Institute(ASMI) invited the Juneau-based Alaskan Brewing Company to feature its flagship Amber Beer in concert with Alaska seafood at the opening reception and conference banquet. Alaskan Amber, a beer that has achieved considerable recognition in brewing circles, proved an excellent accompaniment to the Mexican cuisine. Rick Bayless, chef and owner of two of the most acclaimed Mexican restaurants in the U.S., presided over the conference. Members of the Mendoza family from Oaxaca were flown in to demonstrate traditional cooking methods, including the making of masa flour for tortillas, and traditional methods of preparing succulent barbecued pork.

Alaskan Brewing Company's interest in seafood goes far beyond the trolling vessel depicted on the Alaskan Amber label. The award-winning craft brewery actively develops recipes using Alaskan beer and Alaska seafood as ingredients. Special brewmaster's dinners are also held throughout the Pacific Northwest to give consumers the opportunity to taste a variety of dishes made with beer, and then pair Alaskan beers with those dishes. In February, company Brewmaster Geoff Larson will be leading a seminar at the American Culinary Federation Western Regional Conference in Coeur d'Alene, Idaho, on the intricacies of cooking with beer as an ingredient.

Alaska Seafood Marketing Institute's productive relationship with the Culinary Institute of America helps position Alaska seafood at the forefront of American dining trends, and increases usage of Alaska Seafood in the foodservice sector. ASMI conducts annual seafood seminars to train executive chefs and restaurateurs in uses of the various species of Alaska seafood. These seminars have led to Alaska seafood appearing on the menu in more than 3600 restaurants,including national family dining chains like Denny's and Sizzler, and fine dining restaurants at Marriott properties. ASMI developed a special booklet of Alaska seafood recipes for this year's CIA World of Flavors Conference, called "Fiesta Alaska!" Last year's conference, which ASMI also helped sponsor, focused on Asian flavors.
