Alaskan Strikes Big Nugget in Old Gold Mine
For hundreds of years, before modern day refrigeration, beer was fermented in caves around the world. The cool, constant temperature of underground storage allowed brewers to continue to ferment or store (lager) beer in the summertime. Caves were cooled by being filled with large quantities of ice collected from rivers, glaciers, and ponds or simply with natural ventilation in more northern climates.
