Place brown sugar, butter, nuts, nutmeg and vanilla in a heavy frying pan. Heat and stir until butter is melted. Add bottle of 1993 Alaskan Smoked Porter and the butter-flour mix to frying pan. Boil, stirring constantly, until mixture has reduced and thickened. Pour Porter mixture over apples, mix gently, and spread topping over all. Before thermometers were invented, brewers would dip a thumb into the mix to find the right temperature for adding yeast. Too cold, and the yeast wouldn't grow. Too hot, and the yeast would die. This became known as rule of thumb.
