1993 Smoked Porter Apple Crisp
Ingredients
Desserts
  • Topping:
  • ¾ cup rolled oats
  • ½ cup firmly packed brown sugar
  • ¼ cup flour
  • ½ cup broken and toasted walnuts
  • 2 Tablespoons butter
  • 2 Tablespoons canola oil
  • Fruit Filling:
  • 4 large baking apples, peeled and sliced
  • 12 oz. (1993) Alaskan Smoked Porter (you could use another vintage but this was the original recipe)
  • ½ cup brown sugar
  • 2 Tablespoons butter
  • ¼ cup broken and toasted walnuts
  • Pinch of nutmeg
  • 1 teaspoon vanilla
  • 1 teaspoon butter mixed with 1 tablespoon flour
  •

    Methods/steps
    To make topping:
Melt together butter and oil. Mix all dry ingredients in a separate bowl then add oil/butter mixture. Set aside.

Place apples in baking pan and bake until semi-soft at 350 degrees.
Place brown sugar, butter, nuts, nutmeg and vanilla in a heavy frying pan. Heat and stir until butter is melted. Add bottle of 1993 Alaskan Smoked Porter and the butter-flour mix to frying pan. Boil, stirring constantly, until mixture has reduced and thickened. Pour Porter mixture over apples, mix gently, and spread topping over all. Return to oven until apples are soft and topping is golden.

    Brewtoids
Before thermometers were invented, brewers would dip a thumb into the mix to find the right temperature for adding yeast. Too cold, and the yeast wouldn't grow. Too hot, and the yeast would die. This became known as rule of thumb.
