5 Spice BBQ Baltic Porter Black Cod
Ingredients
Alaskan Baltic Porter Recipes

·        Chinese 5 spice

·        Ginger

·        Cloves

·        Pink peppercorns, ground

·        Cinnamon

·        1 can smoked oysters

·        1 can pineapple rings

·        Mirin

·        Sirache sauce

·        ¼ brown sugar

·        1 cup catsup

·        3 tbsp. mustard powder

·        3 cloves garlic

·        Honey

·        Soy sauce

·        Baltic Porter

·        2 whole black cod fillet

·        4 cedar planks

 

Methods/steps

Fish:
Fillet black cod, trim, rinse with cold fresh water. Liberally rub with 5 spice, ginger powder, clove and cinnamon. Coat meat completely and let sit for 3 hours to “dry” marinate.

Baltic Porter Barbeque sauce:
Reduce 22oz. Baltic Porter slowly with 1 can smoked oysters; minced, all juice from 12oz. can of pineapple rings. Mix reduction with catsup, mustard powder, chopped garlic cloves, honey, brown sugar, Sirache sauce, chopped pineapple rings and soy sauce.

Cooking:
Soak cedar planks in Smoked Porter for 1 hour. Sear black cod meat on bbq to blacken spices. Flip fish over on top of cedar planks and bbq slowly, often basting with bbq sauce. When fish squirts to the touch, it’s done. Finish with honey drizzle and torch to caramelize.
