Alaskan Coastal Gumbo
Ingredients
Methods/steps In a large pot, melt 1 1/4 cups margarine. Add 3/4 cup whole wheat flour, brown it. Then add 1 large onion, chopped and 1 large chopped green pepper. Sauté for about 10 minutes. Add 2 quarts water, 1 Alaskan Amber Beer, and 4 15 oz. cans of chopped tomatoes and 4 cups chopped okra in their liquid. Add 1 teaspoon gumbo file, 2 tsp. curry powder. Simmer 10 minutes. Then add about 3 cups chopped mushrooms and 2 1/2 cups little Petersburg shrimp. Add a few dashes of Tabasco, 1 1/2 tsp. salt and 1/2 tsp. pepper. Simmer about ten minutes and season to taste. Add 6 cups of cooked rice and mix well and serve.
