Alaskan Coastal Gumbo
Ingredients
  • 1 1/4 cups margarine
  • 1 12 oz. bottle Alaskan Amber Beer
  • 3 cups chopped mushrooms
  • 3/4 cup whole wheat flour
  • 4 15 oz. cans chopped tomatoes
  • 2 1/2 cups Petersburg shrimp
  • 1 large onion, chopped
  • 4 cups chopped okra, in liquid
  • Tabasco to taste
  • 1 large bell pepper, chopped
  • 1 tsp. gumbo file
  • 1 1/2 tsp. salt
  • 2 quarts water
  • 2 tsp. curry powder
  • 1/2 tsp. pepper
  • 6 cups cooked rice

    Methods/steps
    In a large pot, melt 1 1/4 cups margarine. Add 3/4 cup whole wheat flour, brown it. Then add 1 large onion, chopped and 1 large chopped green pepper. Sauté for about 10 minutes. Add 2 quarts water, 1 Alaskan Amber Beer, and 4 15 oz. cans of chopped tomatoes and 4 cups chopped okra in their liquid. Add 1 teaspoon gumbo file, 2 tsp. curry powder. Simmer 10 minutes. Then add about 3 cups chopped mushrooms and 2 1/2 cups little Petersburg shrimp. Add a few dashes of Tabasco, 1 1/2 tsp. salt and 1/2 tsp. pepper. Simmer about ten minutes and season to taste. Add 6 cups of cooked rice and mix well and serve.
