Alaskan Stout Gumbo
Ingredients
  • 2 green peppers, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 jalapeno peppers, minced
  • 1 bottle Alaskan Stout
  • 2 15 oz. cans dark red kidney beans, drained
  • 2 15 oz. cans stewed tomatoes (Cajun recipe), with juice
  • 1 chicken breasts, grilled and cubed
  • 1 lb. andouille sausage, grilled and sliced
  • 1 lb. shrimp, boiled and shelled
  • Cajun Creole seasoning to taste

    Methods/steps
    In a large pot, combine vegetables and beer. Add water if needed to just cover the vegetables. Bring to a boil and cook for 10 minutes. Add beans and tomatoes. Simmer over low to medium heat for 20 minutes, stirring occasionally. Add grilled chicken, sausage and shrimp and heat through. Spice to taste with Creole seasoning and serve over rice.
