Alaskan Summer Black Bean and Moose Sausage Soup
Ingredients
Alaskan Summer Ale Recipes
  • 4 strips of bacon
  • 1 large onion, diced
  • 3 stalks celery, diced
  • 2 cloves garlic, crushed or diced
  • 2 c. chopped carrots
  • 2 tsp. basil
  • 1 tsp. cumin
  • ½ tsp. cayenne pepper
  • Salt, to taste
  • 3 c. moose sausage
  • 4 c. beef bouillon
  • 3 cans black beans
  • 1 c. Alaskan Summer Ale
  • Sour cream, to garnish
  • Chopped green onions, to garnish

    Methods/steps
    Cook bacon in a skillet; drain bacon and cut into tiny pieces. Saute onion, celery, garlic, carrots, basil, cumin, cayenne and salt in a Dutch oven until onion is transparent. Add bacon, moose sausage, beef bouillon and black beans. Simmer for a couple of hours, then add Alaskan Summer Ale.

    Remove from heat and top with sour cream and green onions.

    Before thermometers were invented, brewers would dip a thumb into the mix to find the right temperature for adding yeast. Too cold, and the yeast wouldn't grow. Too hot, and the yeast would die. This became known as rule of thumb.
