Amber Chicken Wraps
Ingredients
Meat & Poultry
  • 1 tbsp. sesame oil
  • 1 lb. ground chicken, well-drained
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • ½ red bell pepper, diced
  • 1 tbsp. minced ginger
  • 8 oz. firm tofu, diced
  • ½ c. Alaskan Amber
  • 1/3 c. hoisin sauce
  • 1 tsp. hot chile paste
  • ½ c. peanuts, chopped
  • 2 heads Boston lettuce, cored, washed and separated into large leaves
  • Fresh chives

    Methods/steps
    In a large skillet, heat oil over medium heat until hot. Add chicken and cook until cooked through, breaking up any large pieces. Remove from heat and use colander to remove excess liquid. Return to pan; add onions, garlic, pepper, ginger and tofu. Cook until onions are softened. Pour in beer,k hoisin sauce and chile paste. Cook until heated through. Stir in chopped peanuts.

    Place a spoonful of meat mixture in center of lettuce leaf, edges curling upward. Fold up burrito style. Wrap chives around filled leaves and tie to secure.
