Amber Fig-Prosciutto-Basil Salad

Methods/steps Remove most of the stems from the figs and cut them nearly in quarters, leaving them attached at the base. Press them at the base so the top opens out like a flower. Marinate the fig flowers in ¾ cup of beer for ½ to 1 hour.
Marinate prosciutto into strips and marinate in ½ cup beer for ½ to 1 hour. Whisk ½ cup of beer into 1 cup of balsamic dressing. Wash, then tear lettuce into bite-sized pieces in a large bowl. Toss with basil and prosciutto. Arrange salad mixture on serving platter, then place figs on, flower side up. Sprinkle with lemon zest and top with dressing. Submitted by: Ann Metcalfe |
