Amber-osia Enchiladas
Ingredients
  • 4 chicken breasts or 8 thighs
  • 1-2 tbs oil
  • garlic (as much as you love)
  • 1 can diced green chiles
  • 1 large can of cream of chicken soup
  • 1.5 bottles of Alaskan Amber
  • 16 oz Sour Cream
  • Flour tortillas
  • 1 pound grated Monterey Jack cheese

    Methods/steps
    Preheat oven to 350 degrees. Place chicken on baking sheet and bake for 20-30 minutes or until done. Let the meat cool and shred.
    In large saucepan, heat the oil and add the garlic and green chiles. Add cream of chicken soup and beer. Simmer on low until thick. Add sour cream and bring to boil. Remove sauce from heat. Have your tortillas and cheese ready. Roll in a tortilla your meat, cheese and sauce. Place in a 13X9 in pan. When pan is full, pour sauce over the rolled chicken and top with more cheese. Bake at 375. Let stand 5 mins. prior to serving.
