Beer Battered Coconut Shrimp

Methods/steps Combine eggs, beer, and Cajun seasoning, flour and baking powder. Blend well. Season shrimp with remaining Cajun seasoning. Dip the shrimp in beer batter and roll in coconut. Fry in oil heated to 350 degrees. The oil should be at least 1 ½inch deep. Place shrimp carefully in oil a few at a time and cook until golden brown. Remove and drain on paper towels. Blend together dipping sauce ingredients and serve with shrimp.
