Black and Blue Stout Strata

· 1 large red or Bermuda onion · A few finely chopped chili pepper; jalapeno, Serrano, Anaheim, etc. · 7 ounces of shredded cheese; mozzarella, parmesan, cheddar, a bit of blue (Stilton, gorgonzola, etc.) · 5 English muffins torn to bits · 4 large eggs · 2 cups milk or half and half · ½ Alaskan Stout · ½ sour cream · 1 tsp. hot mustard · Dash of black pepper · Dash of salt (optional) · Dash of hot sauce and/or powdered chili pepper Methods/steps Caramelize onion and deglaze in Alaskan Stout. Add chili peppers and cook until softened. In spring pan, add torn bits of English muffins to fully cover bottom of pan about 3. Top with ¾ of cheese and add a few of the caramelized onions and chili peppers. Cover with the the rest of English muffin bits. In a bowl, beat the 4 eggs and mix in remaining caramelized onions and chili peppers, milk (or half and half), beer, sour cream, hot mustard and seasonings. Pour over the pan contents and top with remaining cheese, making sure the blue cheese is spread around evenly. Cover and chill 2-24 hours. Remove from refrigerator ½ hour before baking at 325 degrees for 50-55 minutes. Let stand at room temp for 5-10 mins. Move to serving dish. |
