NOTE: You will need a kitchen blowtorch.
Methods/steps Set sablefish in baking or roasting pan. Simmer Alaskan Amber in a saucepan for about an hour and allow to cool; mix in pomegranate juice, ginger, garlic, soy sauce and cranberry sauce. Pour mixture over fish and marinate for at least 4 hours. Preheat oven to 375 degrees. Slowly braise fish, at least 1 hour; do not overcook. Baste while cooking.
Mix brown sugar and white sugar. Lay fish filets on plate and sprinkle with sugar. Using a blowtorch, melt the sugar until it forms a crispy top on the fish. Serve immediately. Submitted by Michael and Amber King. |
