Black Cod Brule
Ingredients
Seafood
NOTE: You will need a kitchen blowtorch.
  • 6 lbs. whole sablefish filleted and trimmed
  • 24 oz. Alaskan Amber
  • 1 ½ c. Pomegranate juice
  • 3 tbsp. grated ginger
  • 3 cloves of garlic peeled and minced.
  • Soy sauce to taste
  • 2 c. cranberry sauce (homemade if possible)
  • 1 c. brown sugar
  • 1 c. white sugar

    Methods/steps
    Set sablefish in baking or roasting pan. Simmer Alaskan Amber in a saucepan for about an hour and allow to cool; mix in pomegranate juice, ginger, garlic, soy sauce and cranberry sauce. Pour mixture over fish and marinate for at least 4 hours. Preheat oven to 375 degrees. Slowly braise fish, at least 1 hour; do not overcook. Baste while cooking.
    Mix brown sugar and white sugar. Lay fish filets on plate and sprinkle with sugar. Using a blowtorch, melt the sugar until it forms a crispy top on the fish. Serve immediately.
