Blue Cheese & Winter Ale Scalloped Potatoes
Ingredients

  • 3 Tablespoons flour
  • 3 Tablespoons butter, cubed
  • 16 oz. Alaskan Winter Ale
  • 8 oz. evaporated milk
  • 8 oz. havarti, cubed
  • 8 oz. blue cheese, crumbled
  • 4 large potatoes, thinly sliced
  • ½ teaspoon black pepper
  • Dash cayenne
  •  

    Methods/steps
    Preheat oven to 375. Melt butter in heavy saucepan over medium heat. Sprinkle flour over butter and whisk in. Cook, stirring until golden brown. Slowly whisk in ½ each of beer and milk. Add cheeses to sauce, stirring constantly as cheese melts. Add remaining Alaskan Winter Ale, milk and seasoning to taste.

    Alternate layers of cheese sauce and potato in greased 13 x 9 dish. Bake at 375 for 40 minutes or until potatoes are done and the top of the casserole is golden brown. Cover with foil if the dish browns too quickly. Remove from oven and let rest for 10 minutes before serving. This is a great dish to accompany all sorts of winter fare!
