Chicken Enchiladas with Pale Ale

· 4 cups chopped, cooked chicken · 2 cups shredded extra sharp cheddar cheese · 2 cups chopped green chiles · 2 cups chopped tomato · 1 cup Pale Ale · 1 cup of corn · ½ cup chopped onion · 8 – 8 inch corn tortillas Methods/steps Stir together first 6 ingredients. Spoon chicken mixture of first tortilla layer in lightly greased baking dish. Add two more layers of tortillas and chicken mixture and cheese. Bake for 15-20 minutes and serve. |

It's clear from the Mayflower's log that beer was the reason the Pilgrims landed at Plymouth Rock. The crew didn't want to waste beer looking for a better site, so they hastened the passengers ashore for water so the seamen might have more beer.
