Curried ESB Butternut Squash Soup
Ingredients

Extra Virgin Olive Oil
1 apple, peeled and diced 3 celery stalks, chopped 1 large finger of ginger, peeled and sliced fine 4 cloves of garlic, peeled and minced 1 onion, diced 2 tbsp. red hot curry paste 4lbs. butternut squash peeled and cut into 2- inch cubes 2 (12oz.) bottles Alaskan ESB 1 qt. organic chicken broth 1 ( 7 oz.) can light coconut milk Roasted pumpkin seeds for garnish Methods/steps In a heavy pot, on medium heat, sauté apples, celery, ginger, garlic and onion in extra virgin olive oil till soft. Add hot curry paste and stir until well blended. Add squash, Alaskan ESB and broth. Simmer for 20 minutes. Remove from heat and puree soup in blender. Add coconut milk and mix well. Pour into bowls, garnish with pumpkin seeds and serve.
