Extra Special Moose Stew
Ingredients
Alaskan ESB Recipes
  • 5 lb. moose meat, may substitute beef
  • 3 bottle (36 oz.) Alaskan ESB
  • ½ lb. bacon, chopped
  • ¾ cup flour, seasoned with salt and pepper
  • 1 tsp thyme
  • 2 cloves garlic, crushed
  • 1 tsp onion powder
  • 1 cup pearl onions
  • 2 14 oz. Cans beef broth
  • 1 bay leaf
  • 6 white potatoes, peeled and cubed
  • 6 red potatoes, peeled and cubed
  • 2 cups baby carrots
  • 1 cup black olives, halved
  • 2 cups peas, frozen
  •  

    Methods/steps
    Cut meat in 1¡¨ chunks. Marinate meat with one bottle of Alaskan ESB in a ziploc„¥ bag in refrigerator overnight.
    Cook bacon in skillet and reserve grease. Set cooked bacon aside. Dredge meat in seasoned flour, coating evenly. Brown meat on all sides in bacon grease in small batches over medium heat.
    Add browned meat and remaining ingredients, including two bottles of Alaskan ESB to a large pot. Simmer over medium heat for 2 hours.
