Extra Special Mushroom Stew
Ingredients
Alaskan ESB Recipes
  • 2 lb. beef stew meat, cubed
  • 2 cans cream of mushroom soup
  • 2 packages Knorr French onion soup mix
  • 1 1/2 cups Alaskan ESB (12 oz. bottle)
  • 2 - 3 lbs. Fresh mushrooms, cubed (you can use crimini, white, portabella, shitake, chantrelle, oyster or a combination)
  • Canola oil for browning meat
  • Flour for browning meat
  • Salt and pepper to taste

    Methods/steps
    Season stew meat with salt and pepper. Put flour in plastic bag, add meat and shake until coated. Heat 1/4" of oil in a heavy stockpot on medium/high. Brown one layer of meat on both sides. Repeat until all meat is cooked through. Drain oil.
    Meanwhile, stir mushroom soup, French onion soup mix and Alaskan ESB. Return stew meat to pot and add soup mixture. Stir well and add mushrooms. Simmer over medium low/medium heat for 2 hours or until meat is tender, stirring occasionally. Enjoy with mashed potatoes, a green salad and cold Alaskan beer.

    It's clear from the Mayflower's log that beer was the reason the Pilgrims landed at Plymouth Rock. The crew didn't want to waste beer looking for a better site, so they hastened the passengers ashore for water so the seamen might have more beer.
