Extra Special Potato Salad
Ingredients
Salads & Side Dishes
  • 12 to 15 medium potatoes, peeled and cubed
  • 2 bottles (24 oz.) Alaskan ESB
  • 1 ½ cup mayonnaise
  • 1 ½ cup mustard
  • ¾ cup sweet relish
  • ½ cup celery, finely chopped
  • 3 eggs, hard-boiled and finely chopped
  • ½ onion, minced
  • salt and pepper to taste

    Methods/steps
    Peel and cube potatoes. Add to large pot of boiling water and cook until they pierce easily with a fork. Rinse in cold water and drain. Add potatoes to large bowl and add Alaskan ESB. Cover and let marinate one hour in the refrigerator or overnight. In medium bowl mix remaining ingredients. Drain potatoes, reserving ½ cup of beer liquid. Mix potatoes, other ingredients and reserved beer well and until all the potatoes are well coated. Garnish with paprika and parsley. Serve with Alaskan Amber Beer Brats or a grilled sausage of your choice.
