Garlic, Onion and Beer Soup
Ingredients
  • 5 to 6 medium onion, thinly sliced
  • 2 heads garlic
  • 2 tablespoons olive oil
  • 22 oz. bottle of Alaskan Amber
  • 5 cups beef broth
  • Hot sauce to taste
  • 2 tablespoons unsalted butter
  • 8 slices day-old bread, crusts removed and cubed ½ inch
  • Parmesan, freshly grated
  •  

    Methods/steps
    Preheat oven to 350 degrees.
    Slice tops off garlic and drizzle in olive oil. Wrap in foil and bake for 40 to 45 minutes until tender and caramelized.

    In heavy saucepan, heat oil and add onions. Cook, stirring frequently, until browned. Add beer, roasted garlic and broth. Simmer, covered for 45 minutes. Add seasoning to taste. While simmering soup, melt butter over moderate heat. Add bread cubes and toast while stirring to golden brown. Serve soup topped with croutons and parmesan. Enjoy!
