Gingerly Beet Marinated Rock Tacos

· 5 lbs. rock fish · 2-6oz Alaskan Amber Ale · 1 cup finely diced ginger · 5 eggs beaten · 1 cup minced cilantro · 2 cups batter mix · 3 large angle hair beets shredded and rinsed until no red bleeds. Drain well · 1 ripe, firm mango, diced · Juice of half a lemon · 1 cup parsley · 50 taco shells Methods/steps Marinate rock fish in Amber for two hours with pureed garlic. Mix with ginger, cilantro, eggs and batter. Coat fish and fry in olive oil. Toss together mango, lemon juice and parsley. Bed the fish on angel hair shredded beets. Submitted by: Geoff Larson
