Healthy Harvest Pie
Ingredients
Desserts

Pastry:

·        2 cup white whole wheat flour

·        1 tsp Splenda

·        2/3 cup canola oil

·        ¼ tsp salt

·        3 tbsp 2% milk

Filling:

·        1 c baked yam

·        1 c butternut squash (steamed)

·        ½ c sugar

·        ½ c brown sugar – Splenda

·        ¾ c eggbeaters

·        ½ tsp salt

·        ½ ginger

·        ½ tsp allspice

·        2 tsp cinnamon

·        ¼ t cloves

·        1 t pumpkin pie spice

·        ¾ tsp vanilla

·        1 c fat free evaporated milk

·        ½ c Alaskan White Ale

 

 

Methods/steps

Pastry: Mix dry pastry ingredients together in 9” pie plate with a fork. Whip together oil, milk and pour over flour mixture and mix with fork until all flour is dampened. Reserve about 1/3 of dough for crumble crust top. Press remaining dough evenly against bottom and sides of pie plates. (Could reduce this by 1/3 since not using a crumble crust top).

Filling: Put all in blender in order given and mix for 20 to 25 seconds. Pour in to pie shell and bake 15 minutes at 400 degrees and 45 minutes at 350 degrees.
