Hot & Smoky Baked Beans
Ingredients

  • 6 bacon slices
  • 1 ½ cups onion, chopped
  • 1 ¼ cups barbecue sauce
  • 22 oz. bottle Smoked Porter
  • ¼ cup mild molasses
  • 3 tablespoons Dijon mustard
  • 3 tablespoons (packed) dark brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 3 to 4 tablespoons canned chipotle chilies, drained and minced
  • 6 16 oz. cans Great Northern beans, drained

    Methods/steps
    Preheat over to 350 degrees. Cook bacon in large skillet over medium heat until crisp. Transfer to paper towels and drain. Transfer 2 ½ tablespoons bacon drippings from skillet to large bowl. Finely chop bacon; add to bowl. Add onion and next 7 ingredients to bowl and whisk to blend. Whisk in chipotle chilies, based on level of spiciness preferred. Add beans and stir to coat. Transfer mixture to 13 x 9 inch baking dish. Bake uncovered until liquid bubbles and thickens slightly, about 1 hour. Cool 10 minutes before serving.

    Before thermometers were invented, brewers would dip a thumb into the mix to find the right temperature for adding yeast. Too cold, and the yeast wouldn't grow. Too hot, and the yeast would die. This became known as rule of thumb.
