Ken’s Quick Sourdough Pancakes
Ingredients
Breads, Cakes & Cookies
  • 3 cups Krustez Sourdough Bread mix
  • 3 Eggs (best if at room temperature
  • 1/2 cup granulated or powdered sugar
  • 1/2 cup oil or melted butter
  • 1 Tbs. yeast proofed in 1/4 cup warm water or 1 package dry yeast
  • 2 bottles warm Alaskan Amber Beer
  •  

    Methods/steps
    Mix the yeast with the 1/4 cup warm water and allow to set for a few minutes to dissolve and become bubbly. A little sugar will make the yeast act more rapidly.
    Mix the other ingredients together and add the yeast mixture. If possible, allow the batter to sit and rise for an hour or two.
    Bake on a 375 degree griddle for 2 1/2 to 3 minutes on a side. Serve with syrup and butter for tasty eating.

    Notes: Add a small quantity of water or milk if the pancakes are too thick for individual preferences.
    Oil may be eliminated if the pancakes are cooked on a non-stick griddle, and non-stick cooking spray is used to keep the cakes from sticking.
    Krustez Sour Dough Bread Mix is sold in 10 pound bags at Costco and in small bags at the other stores.
    Some of the Krustez Sourdough bread mix can be replaced with unbleached white four, but the sourdough flavor will be decreased.
