King Crab in Alaskan Stout Beer Batter

Methods/steps Mix milk, beer, soy sauce, flours and whey powder in a medium bowl until well blended, set aside. Beat egg whites to soft peaks. Gently fold egg whites into flour mixture.
Mix crackers and cheese together and place on plate for dredging. (Skip whey powder, if a less sweet taste is desired and then add more flour in its place) Heat peanut oil to about 375 degrees. Dip fresh Alaskan king crab chunks into batter and then roll in cheese and cracker mixture. Place carefully into oil and cook until golden brown. Serve hot with your favorite Alaskan beer. Before thermometers were invented, brewers would dip a thumb into the mix to find the right temperature for adding yeast. Too cold, and the yeast wouldn't grow. Too hot, and the yeast would die. This became known as rule of thumb.
