Oatmeal Stout Winter Chutney

·         1-12oz bottle of Alaskan Oatmeal Stout

·         1 large yellow onion diced

·         1 cup strawberries from vinegar infusion

·         1 cup cranberry pulp from vinegar infusion

·         1 cup dried cranberries

·         1 cup dried currents

·         1 cup diced dried fruit mixture of choice

·         3 jalapeños

·         1.5 cups granulated sugar

·         2 cloves garlic, minced

·         1 tsp. salt

 

Methods/steps

Simmer onion, garlic and Alaskan Oatmeal Stout in a heavy bottomed stainless steel pan until the volume is reduced to about half. Add the fruit, fruit pulp from vinegar infusion, or fruit and vinegar, mustard seed and jalapeño and simmer further until the liquid is about equal to the solids in volume. Some foam may occur on the top.

Add the sugar, dried cranberries, currents and dried mixed fruits with the salt. Simmer, stirring occasionally until thickened. 

Pack in to jars or refrigerator containers.
