Pecan Crusted Pork Tenderloin
Ingredients
Meat & Poultry
  • 1-1/2 c. Macadamia, Pecan, or Hazelnuts, finely ground
  • 1/4 c. flour
  • 1 egg beaten w/ 2 T milk
  • 2 12oz. Pork tenderloins cut in 1/2
  • 2 T vegetable, or olive oil
  • 2 c. mango pulp (fresh or canned)
  • 1 c. Chicken stock
  • 1 c. Alaskan Winter Ale
  • 1/2 c. light cream
  • 2 T butter
  • 2 Red Pepper, diced
  • 1/2 # Snow Peas

    Methods/steps
    Preheat oven to 450. Mix egg, flour and nuts in large bowl. Rinse roast and pat dry. Dip roast in egg/nut mixture.
    Heat oil in heavy saucepan over medium heat. Add roast and cook on all sides until golden brown. Transfer to baking pan and roast 20-25 min.
    Sauce: Combine mango, chicken stock, Alaskan Winter Ale, and cream w/ Salt and
    Pepper in a medium saucepan. Simmer over low heat until hot.
    Garnish: Melt butter and sauté peppers for 1 min over medium heat in a small skillet. Add Snow Peas and cover for 1-2 minutes until cooked but crisp.
    To assemble, arrange sliced roast on platter and generously spoon sauce over the top, garnishing with vegetables. Serve with rice, a salad and cold Alaskan beer.
