Risotto with Spicy Moose Sausage
Ingredients

  • 1 lb. spicy moose sausage ground (may substitute another ground sausage)
  • 1 ½ cups chopped onion
  • 2 large cloves garlic minced
  • 1 ¼ cups medium-grain white rice
  • 2 to 2 ½ cups low-salt chicken broth
  • 2 cups Alaskan Stout
  • 1 ¼ cup Parmesan cheese grated
  • ½ cup fresh parsley chopped

    Methods/steps
    Sauté sausage, onion and garlic in heavy saucepan over medium heat until onion is tender, about 8 minutes. Add rice and stir 1 minute. Add 2 cups broth and 2 cups Alaskan Stout. Reduce heat to medium-low and simmer until liquid is absorbed, stirring frequently, about 15 minutes. Continue to simmer until rice is just tender and mixture is creamy, adding more broth ¼ cup at a time and stirring frequently, about 6 minutes. Add ¼ cup cheese and ¼ cup parsley. Season with salt and pepper to taste. When ready to serve, sprinkle risotto with remaining parsley, pass remaining cheese separately.
