Shannon's Amber Chicken and Garlic Stew
Ingredients
  • 4 lbs. boneless chicken thighs
  • 1 Tablespoon salt
  • 1 Tablespoon white pepper
  • 60 cloves garlic, peeled (about 4 heads)
  • ¼ cup olive oil
  • 4 stalks chopped celery and leaves
  • ½ cup dried parsley
  • 1 Tablespoon fresh thyme leaves
  • 3 cups Alaskan Amber
  • 2 bottles Alaskan Amber for marinating

    Methods/steps
    Marinate chicken overnight in 2 bottles of Alaskan Amber.
    Preheat oven to 375 degrees. Season chicken with half of the salt and pepper.
    In a shallow 6-quart casserole, add oil, coating bottom of dish. Add garlic, celery, parsley, and sprinkle with remaining salt and pepper and thyme. Add Alaskan Amber and stir. Add chicken and baste. Cover tightly and cook for 30 minutes. Turn chicken, baste, and cook 40 minutes or until internal temperature reaches 185 degrees. Serve with crusty French bread and Alaskan Amber beer. Serves 6 to 8.
