Smoked Oyster Stuffed Chicken
Ingredients
Seafood
  • 2 Tablespoons olive oil
  • 1 medium onion, quartered and sliced
  • 10 cloves garlic, sliced
  • 2 tins (3.66 oz) smoked oysters
  • 1 ½ sleeves Ritz crackers, coarsely crushed
  • 1 bottle (12 oz) Alaskan Pale
  • 1 whole chicken

    Methods/steps
    Sauté onion and garlic in olive oil until transparent. Add smoked oysters and oil from the tin. Sauté for five minutes. Stir in Ritz crackers. Add Alaskan Pale a little at a time until you reach desired consistency. Stuff chicken and bake at 350 degrees for 1 ½ hour or until internal temperature of stuffing reaches 160 degrees. Baste during cooking with any remaining Alaskan Pale.
