Smoked Porter Ham & Cheese Rolls
Ingredients

  • 2 sticks (1/2 pound) butter or margarine, melted
  • 2 cups Alaskan Smoked Porter (16 oz), boiling
  • 4 Tablespoons instant mashed potato flakes
  • 1/3 cup sugar
  • 1 ½ teaspoon salt
  • 8 cups flour
  • 1 cup warm water
  • 4 Tablespoons yeast
  • 1 ½ pounds thin sliced deli ham (black forest or honey ham is best)
  • 2 pounds Monterey Jack, shredded (you can use any kind or blend but Swiss cheese melts right into the dough)

    Methods/steps
    Preheat oven to 350 degrees. Mix first 5 ingredients together in large bowl until combined. In a separate small bowl, mix yeast and water. When beer mixture is cool, add yeast mixture and 2 cups of flour. Mix on medium speed for 2 minutes. Add 5 ½ to 6 cups flour one cup at a time, mixing each time until well combined. Dough should be soft and pull away from the side of the bowl.

    Oil a large bowl and add dough. Cover and let rise in a warm, draft-free place until doubled. Punch down, divide in half and roll out each half on a well-floured surface. Roll out to a rectangle about ½ inch thick. Layer ham slices and grated cheese over the surface of each dough rectangle. Roll up lengthwise and slice rounds about 1 inch thick. Place in greased pans touching slightly. Allow to stand in a warm place for 10 minutes.

    Bake at 350 for 25 to 30 minutes until golden brown. Serve warm or cold.
