Sweet and Sour Halibut
Ingredients
Alaskan Winter Ale Recipes
Seafood
  • 1 red pepper, coarsely chopped
  • 1 orange pepper, coarsely chopped
  • 1 green pepper, coarsely chopped
  • 1 onion, diced
  • 1 tomato, chopped
  • 1 to 1 ½ lbs. Wild Alaska halibut
  • 2 bottles Alaskan Winter Ale
  • Flour
  • ½ Tablespoon Salt
  • ½ Tablespoon Pepper
  • Vegetable oil for frying
  • For sweet and sour sauce:
  • 1 cup chicken broth
  • ½ cup soy sauce
  • ½ cup ketchup
  • ¼ cup vinegar
  • ¾ cup sugar
  • ¾ Tablespoons cornstarch

    Methods/steps
    Simmer peppers and onion in 6 oz. Alaskan Winter Ale over medium low heat for 15 - 20 minutes. Drain and set aside vegetables
    Cut halibut into chunks no smaller than ½inch by ½inch and 1inch by 1inch. Soak in remaining Alaskan Winter Ale for 2 hours. Drain and set aside.
    Mix flour, salt and pepper in a large bowl. Dip halibut in flour mixture and fry in oil heated to 350 degrees until golden brown and cooked through.
    For sweet and sour sauce mix broth, soy sauce, ketchup and vinegar. Stirring constantly, bring to a boil and then remove from heat. In a separate small bowl, mix sugar and cornstarch and add a small amount of the hot liquid while stirring until pudding consistency. Pour cornstarch mixture into saucepot, whisking constantly.
    Mix vegetables and sweet and sour sauce and pour into large serving dish. Add tomatoes and halibut and stir gently to coat. Serve over steamed rice if desired.
