White Winter Chili
Ingredients
Alaskan Winter Ale Recipes
  • 1 lb. chicken breast, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, chopped
  • 1 Tablespoon vegetable oil
  • 2 15 oz. cans Great Northern Beans, drained
  • 1 bottle Alaskan Winter Ale
  • 2 4oz. cans chopped green chilis
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • ½ teaspoon white pepper
  • ¼ teaspoon red cayenne pepper
  • 1 cup sour cream
  • ½ cup whipping cream
  •  

    Methods/steps
    Heat oil in a heavy saucepan over medium high heat, add chicken, onions and garlic and sauté until chick is cooked and onions transparent. Add remaining ingredients except dairy. Bring to a boil, then lower hieat and simmer covered for 40 minutes. Add dairy and heat through. Serve with cold Alaskan Winter Ale and hearty bread.

    Before thermometers were invented, brewers would dip a thumb into the mix to find the right temperature for adding yeast. Too cold, and the yeast wouldn't grow. Too hot, and the yeast would die. This became known as rule of thumb.
