Winter Ale Cranberrry Apricot Tart

Methods/steps Thaw the puff pastry dough in the refrigerator in advance.
Preheat the oven to 375 degrees. In a heavy bottomed pan, place sugar and winter ale and place over medium heat gently stirring. If crystals of sugar adhere to the side of the pan, wash them into the heating mixture with a pastry brush dipped into water. Heat to boiling and allow to lightly boil for two minutes. Add the dried apricots and stir gently. Continue to simmer over medium heat until the apricots are transluceht, about 10 minutes. Add the cranberries after picking out any bad berries. Continue simmering until the cranberries are cooked; about 7-10 minutes. Remove from heat and allow to cool. Take the sheets of puff pastry from the package. Using a pizza cutter or a knife cut each piece in half and place the dough on a cookie sheet/ Fold the outside edge to the center about 1/4 inch to create a crust edge. Place the cookie sheet in the preheated oven and bake for 15 minutes. Remove the cookie sheet from the oven and spoon the winter ale cranberry apricot mixture onto the center portio of the baked crust. The center of the pastry will colapse leaving the crust folded edge. Spoon an even level of filling. One batch of filling will make 3 tarts about 5 inches by 8 inches. Serve warm or cold.
