So, how do you cook with beer?

Boat cook The simple rule is...there are no rules (well, okay, never cook with a beer you wouldn’t drink)! Experiment, experiment, experiment. Here are some ideas, discover the possibilities:
  • Many people just add a dash or a bottle to finish off a soup, stew, sauce or de-glaze a pan.
  • Try substituting beer for all or part of a liquid in a recipe.
  • Try heavier beers like Stouts and Porters with heavier foods and lighter flavored beers like Pale and Amber with more delicately flavored dishes.
  • Reducing beer concentrates the flavors, including the bitterness of hops. Make sure you adjust the recipe to add fruit or something with a touch of sweetness to balance that out.
  • Steam, poach or marinate seafood with your favorite beer and combination of spices.
As with pairing, the flavor of beer should complement and not overpower what you are cooking.
