Cooking With The Brew Crew
Chef Tony The Alaskan Brew Crew is a competitive bunch. Whether we are comparing the weekend’s trophy king salmon or how deep the snow was on a hike to remote Forest Service cabins, we keep each other challenged. At Alaskan Brewing Company, we are fans of great beer and fine food. We get to put our creativity to work each year at our annual cook-off. Every year we are amazed at the creativity of our Brew Crew and investors with the various creations and adaptations that they come up with.

    Prawns and Beer Crab and Beer Mushrooms and Beer

    Seafood Croutons
    Ingredients:

  • ½ butter
  • 1 tbsp. garlic, minced
  • 1 cup Alaskan ESB
  • ½ lb. King crab meat, cooked and cleaned
  • ½ lb. shrimp meat, cooked and shelled
  • ½ lb. Halibut, cooked and flaked
  • ¾ cup mayonnaise
  • 2 tbsp parsley, chopped
  • ½ tsp. salt
  • ½ tsp pepper
  • 1 lb. cheese, your favorite, shredded
  • 3 to 1 lb. Loaves of rustic bread, sliced and halved
    Instructions:
    Mix butter and garlic well and spread generously on each slice of bread. Mix seafood, beer, mayonnaise, parsley and spices together in a large bowl. Spoon about 1 tbsp on each bread piece and spread evenly. Sprinkle generously with grated cheese.
    Place on ungreased cookie sheet and bake at 400 degree oven for 20 minutes or until golden brown. Sprinkle with fresh parsley and serve. Makes about 100 servings.
